Dash cams write continuously and overwrite the oldest footage, which is far harder on a card than ordinary photo or phone use. A standard consumer card will fail under that load, usually without warning, and you find out when you need the footage. This card is specified for that duty cycle.
128GB gives you a longer window of recorded history before older footage is overwritten, which matters most on dual-channel setups or where parking mode is running while the vehicle is unattended.
